Process
This lot is composed of the Pink Bourbon varietal and processed utilizing the Fully Washed method. When the cherries on Reinel’s farm reach peak ripeness, they are hand-harvested and delivered to the wet mill located on site. The cherries are pulped the following day, removing the external fruit skin. The coffee is then washed thoroughly to clean away any remaining mucilage and spread out evenly on a covered patio to dry. The air is cooler here, allowing for a slower drying process. Once the beans reach an ideal moisture content, they are bagged and sent to the Pergamino dry mill in Medellín to be hulled and prepared for export.
